Recipe of Lemon Herb Grilled Vegetables
Ingredients:
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsps olive oil
- 2 cloves garlic, minced
- zest and juice of 1 lemon
- 1 tsp dried oregano
- 1 tsp dried thyme
- salt and pepper to taste
- fresh parsley for garnish
Instructions:
- Slice the zucchini, yellow squash, red bell pepper, green bell pepper, and red onion into even, bite-sized pieces.
- In a bowl, mix olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried thyme, salt, and pepper. This creates a flavorful marinade for your vegetables.
- Toss the sliced vegetables in the marinade, ensuring they are well-coated. Let them marinate for at least 15-20 minutes to soak up the delicious flavors.
